Fish in Croatia is prepared in several ways, grilled, boiled and as a stew. When fish is grilled, firewood types and aromatic herbs are taken into account. During grilling, fish is coated by olive oil with rosemary branch. Fish is sprinkled with chopped parsley, garlic and oil. Along the coast you can find the Mediterranean food with a wide range of fish dishes and seafood, cuttlefish, squid, octopus, mussels, shrimp and other seafood.

The fish is cooked in boiled water with oil, vinegar, onion, bay leaf and peppercorns. This is a light, low-calorie dish that is served with boiled potatoes, Swiss chard or cabbage. Fish stew is made with several kinds of fish (grouper, conger eel, bream, sea bream, etc.) that are cut into pieces and fried with onions. Fish is cooked in a clay pot on low temperature.

Salted sardines

Sardines are salted only fresh and whole, with layer of salt between each row, packed next to each other. Fish is salted in wooden and plastic barrels. At the bottom of the barrels there is first layer of salt. Each row of the fish goes in the other direction. Weight is placed on top of the lid, and kept for 3-4 months. Salted sardines can be considered as kind of variant of the marine ham.

Crkivenica bannock with salted sardines (Kvarner)

Kvarner specialty is Crikvenica bannock. The bread dough is mixed and splited into two equal parts. Buttered baking pan is filled with one part of mixed dough, salted sardines and onions. Dish is spiced with olive oil and covered with other half of dough and baked.

Istria stew (Istria)

Grouper, monkfish, eel, squid and shrimp are prepared. The fish is cut into pieces rolled in flour, and fried in hot oil. Squid and shrimp, onion, chopped garlic, parsley, cut tomatoes, bay leaf, peppercorns and salt is part of meal. Water is poured to cover the fish and cooked at a lower temperature.

Bream and grilled vegetables (Dalmatia)

Prepared fish is dried and spiced with dry vegetables. Vegetables (peppers, zucchini, eggplant, mushrooms, and tomatoes) are cleaned and cut into slices. Bream and vegetables are roasted in olive oil. During roast, vegetables are salted, and olive oil added over the fish. Roast Sea Bream and vegetables are served with lemon and rosemary.

Spaghetti with sardines (Dalmatia)

Spaghetti is cooked in salted boiling water and drain. Sardines are cleaned and cut into cubes. Onions are fried on olive oil with sardines, chopped tomato, garlic, parsley and pepper. Meal is simmered and when the sauce thickens, hot spaghetti is placed on the tray and spilled with sardine’s sauce.

Fish mix (Kvarner)

Fish mix includes tartar bass fish sauce and raw Kvarner scampi. Scampi are identified by a pale red colour, with soft and sweet meat, and thinner shell. Their uniqueness is that they live in very shallow water with plenty of drinking water sources.

Bruschetta (Istria)

Bruschetta include sardines in olive oil with parmesan cheese, garlic, tomatoes, capers, olive oil, balsamic vinegar, salt and freshly milled pepper. Meal is served with a loaf of bread ciabatta.

Minced sardines (Vis)

Sardines are prepared, roasted with corn bread soaked in milk, chopped onion, garlic, parsley, salt and pepper.

Filled bonito (Dalmatia)

Bonito is one of the most delicious representatives of Scombridae family of fish. Tasty red meat can be prepared in various ways. Filled bonito is a real gastronomic speciality. Fish is filled with stuffing of ham or bacon, goat cheese, salt, pepper and lemon juice.

It also worth to mention ham tuna with wild capers (Dalmatia), marine ham tuna cream truffle (Kvarner), rice anchovy broth (Vis) and gnocchi with spinach sauce salmon (Dalmatia).
